Salted Caramel Popcorn

There has not been much joy around here lately so after I returned from the vineyard today I decided to make a sweet treat.

Salted Caramel Popcorn

Ingredients:
2 tbsp groundnut oil
100g popcorn kernels
150g sugar
50g golden syrup
75g butter
1 tsp salt

Equipment: 
1 large saucepan with lid
1 small saucepan
Large bowl
Large baking sheet
Hand whisk or fork

Method:
Add oil and popcorn to large pan. Put on lid.  Cook on a medium heat shaking the pan until the popping subsides and the corn has popped.  Place popcorn into a large bowl.

Place sugar and syrup into small pan and cook without stirring until the sugar begins to caramelise.  Swirl the mixture around to achieve golden caramel colour.  Whisk in the butter and salt and blend well.

Pour the caramel over the popcorn and mix well.  Spread out popcorn onto baking sheet and allow to set.  Break into pieces before serving.

Once you have tried this recipe you won't want to go back to shop bought popcorn again as it really is so simple to make and delicious too!

  2. Thanks for sharing this. I'm pretty sure I have some popcorn in the cupboard, this would be great to do at the weekend. A good excuse for popping on a good movie!
