Clean Sweets

Since I gave up sugar (apart from the fructose that occurs naturally in fruit) I have been thinking what I can have as a substitute treat.  Today I played around with some ingredients and came up with a not bad prototype for coconut and cocoa vanilla bites.  Apart from measuring the desiccated coconut, I just used my judgement in the amount used for the other ingredients.  Below is a guideline to making them.

Coconut and Cocoa Vanilla bites
1 cup of desiccated coconut
Few tbsp coconut oil to bind
Couple of tbsp of date paste (made with medjool dates and a little water, cooked for a few minutes and then cooled)
1 tsp vanilla extract
Cocoa powder (I used Green and Blacks)

Put the first 4 ingredients into a mini food processor and mix until mixture starts to clump together.  Remove mixture and form into small balls.  Roll in sieved cocoa powder.  Place on grease-proof paper and refrigerate for about an hour to harden up.

Gizmo update:  Thank you all for your good thoughts and wishes.  So far he has taken well to his new hypoallergenic prescription diet and is almost back to normal.  I won't elaborate on this now but will save a post about this for another time.
