I wanted to make something that was simple that didn't require knives and forks, so I came up with sushi as the savoury option and cinnamon and sugar cake balls for a sweet treat. Both dishes were well received by adults and children alike. I think these may well become my signature dishes for events to come.
Cinnamon Sugar Cake Balls
(you will need a cake pop machine)
50g soft margarine
100g caster sugar
1 tsp vanilla extract
1 large egg
60ml milk
100g plain white flour
1/2 tsp baking powder
pinch of salt
1 tsp cinnamon mixed with 1/2 cup (approx) caster sugar to roll cake balls in
Cream the margarine then add the sugar and vanilla extract and beat until light and creamy.
Beat in the egg.
Mix the flour, baking powder and salt together. Add half to the margarine mix, add milk and mix together.
Add the rest of the flour mixture and combine.
Put large teaspoons of mixture into cake pop wells and cook for 5 minutes. Remove from machine and roll cakes into cinnamon/sugar mix.
Watch as they get gobbled up instantly!

Hi Vivienne! I can put up the recipe for the cake balls later. They get their ball shape by being put into a cake pop maker machine and only take 5 minutes to cook!!! x
