Simulated Simnel and the Moon!

A typical simnel cake has a layer of marzipan in the middle of the cake as well as on the top of the cake. It is traditionally decorated with 11 marzipan balls to represent the apostles of Jesus.

I have made my own version of a simnel cake using an Irish boiled fruit cake recipe and covering the top with a layer of apricot jam and golden marzipan when the cake was cold.

I decorated with marzipan eggs and grilled the top of the cake to brown.


The cake is lovely and moist and improves with keeping getting stickier and more succulent!

It is very easy to make and very easy to eat!

Did you see the beautiful full moon last week at the end of March? It was a beautiful clear orb in the sky and the limitations of my camera doesn't do it justice. Did you know that the March full moon is also known as the full worm, full crow, full crust, full sap, Lenten moon, seed moon and chaste moon.   3. That simnel cake looks really tasty - I love marzipan - I could eat it straight from the packet.
    Yes I noticed the full moon last week too but I've never heard of those names for it.

  5. i thought it was a wonderful moon and i think you've captured it well too.
    i would really like to try your way of making a simnel cake, it looks very delicious. i thought i would be baking and posting today, but unfortunately i have two sick animals that need nursing.

The cake looks so moist its making my mouth water, and yes, thats after a whole day of utter choc-fest feasting!   10. I've just been to see Louise - I'm being tempted with scrummy cake everywhere lol... Now you are making me jealous with the moon aren't you. The next one is April 28th , the Growing Moon . I had wanted to try and take a pic of every full moon this year - made me sad I didn't get this one :-(
