After the success of my Friday Cake Bake series in 2010, I thought I would share some of my cookie experiments with you. I will be dabbling in the kitchen and will be sharing my best recipes with you. I will post them up periodically. Just look out for the posts titled 'Cookies with Friends'. I will only be using cup and spoon measurements so we don't have to worry about Imperial and Metric conversions. All my oven temperatures will be shown in Celsius.
Nutella Sugar Cookie Sandwich
1/2 cup butter at room temperature
3/4 cup caster sugar
1 medium egg
1 Tbsp milk
2 cups plain white flour
1/4 tsp salt
1/4 tsp baking powder
2 tsp vanilla extract
Nutella (for filling)
Cream together the butter and sugar until light and fluffy. Beat in the egg and the milk. Mix the dry ingredients together and then stir into the creamed mixture. Stir in the vanilla extract. Wrap the cookie dough in cling film and leave to chill in the fridge for about 1/2 an hour.
Pre-heat the oven to 190C. Remove the cookie dough from the fridge and roll into walnut sized balls. Flatten down slightly with the back of a fork. Place on baking sheet, evenly spaced. Cook for about 15 minutes until cooked through but still pale in colour.
Leave to cool on a wire rack. When completely cold, sandwich together with Nutella. Let your friends do the taste test with you!
