Unbaked Sugar Free Lemon Bars

After watching the television programme Sugar Free Farm, one of the highlights was the lemon bars at the end of the series party.  The nutritionist in the series shares the recipe for them on her blog here.  One of the participants in the show Tupele Dorgu also shares a simplified version of the recipe on her blog too.  You can find it here.  I made Tupele's version but would do without the date paste in the future as the recipe only calls for 1-2 tsp to be used and I don't think it added much to the recipe.

The lemon bars taste very nice but I think I would make them into lemon balls next time, like truffles, so watch this space!

  5. I've not heard of this programme, it does sound interesting though. I clicked on the link to read the recipe and saw the comment about cauliflower pizza. I've thought about this in the past after seeing it on Pinterest but I'm not sure I could get mine onto that.

  8. So much of this kind of stuff is hardly sugar free and there is still a compulsion to eat all of the sweet stuff. Natural sugars in whole foods are okay in moderation as at the same time you are eating fibre which makes the sugars slower to be absorbed. Also there is a high mineral content in dried fruit. Just don't eat too much of it. However, all these syrups that these recipe books are filled with are really getting away from the whole point of sugar free.

    The less sugar is eaten (in any form) the less you think about it and the easier it becomes to do without it. Saying no to chocolate or sweets or cakes becomes not only habit but there is literally no desire to eat it.

  9. Hi Nancy. You are right. I am trying to cut out added sugar to my diet such as cakes, biscuits, cookies, pastries, ready meals etc. I know that fructose (found in fruit) is also a sugar and read that it can be worse than glucose on the body. I love fruit however and am limiting it to 2 portions a day. As for dried fruit, I am eating it more as a treat. I don't add any sweeteners to my food such as agave, stevia, honey, molasses etc. It is also true that I have no desire to eat sweet and sticky foods at this moment in time.
