Gingernut Biscuits

I was looking for a recipe that didn't involve using up too many store cupboard ingredients and this one was perfect for it.  The original recipe is from Delia Smith's Book of Cakes.  Here is a photo of my effort above.

4oz self-raising flour (110g)
1 tsp ground ginger
1 level tsp bicarbonate of soda
1 and half oz granulated sugar (40g)
2oz margarine (I used butter) (50g)
2 tablespoons golden syrup (50g)

Preheat oven to gas mark 5 (375F) (190C)

Grease a large baking tray.

Sift flour, ginger, bicarbonate of soda together in a mixing bowl.

Add sugar.  Lightly rub in butter until crumbly.  Add syrup.  Mix it all to a stiff paste.

Divide mixture into sixteen even pieces and roll into balls.

Place on baking sheet leaving plenty of space between.  Flatten slightly.

Bake just above centre on oven for about 15 minutes.  Leave to cool for 10 minutes and then transfer to wire rack.

Store in an airtight tin if they last that long!

  4. They look yummy, Simone! We don't have golden syrup in the US. I wonder what could stand in for it. I also don't have ground ginger, but I do have a nice piece of fresh ginger. Haha, not sure if it's worth totally changing the recipe or instead going with something that I actually have the ingredients for.

    1. Hi Anne! The recipe is really adaptable. You could substitute honey or maple syrup or any liquid sweetener in place of the golden syrup I would have thought. You could leave out the ginger and use cinnamon or another dried spice but then they just wouldn't be ginger-nuts! :)

    1. Hi Julia. Yes! Please do give it a try! I am coping very well thank you. I don't mind being confined to the house at all as I am used to being on my own during the day. The difficulty is having two others working from home with me! I hope you are coping Julia. I'm always here on my blog or email if you ever want to chat. x

    2. Hi Simone, thanks for your comment on my post.
      I'm okay now. Working in the law courts means we are classed as key workers!! I, and various colleagues, were getting increasingly worried/frightened about having to go to work when the very loud and clear message is 'Stay at home'. We can't work from home - our systems are far too old. Anyway, yesterday me and a colleague were getting really wound up and a senior manager came over. We both got very upset, which resulted in us both leaving. I hadn't slept for 2 nights and had been having palpitations. I'll be 60 very soon, so although I'm not in the 70 category, I'm a lot closer to that than I am to being 20/30. Anyway, I managed to get a telephone appointment with the GP and I've been signed off for 3 weeks with stress/anxiety and then I'll speak to them again. I've only got to get through 6 weeks because that's when I retire anyway, so if I can get another 3 week note, I'll be covered.
      I'm feeling absolutely fine now that I'm home - will be even happier in 7 days to know I haven't picked anything up in the workplace!
      Sorry to go on Simone. I know absolutely that many, many people are suffering in lots of different ways, but I had to put myself first yesterday morning for my own mental health.

    3. Hi Julia, You are most welcome to come over here and 'go on' - it's understandable! I am not surprised that you have stress and anxiety with all the mixed messages. I'm not looking forward to going out to get food supplies but know I will have to at some point. I am terrified at the thought of catching it or unknowingly passing it on. Hopefully your GP will sign you off until the end of 6 weeks. Take some deep breaths and keep washing your hands!!! Take care. x
