Simone's Friday Cake Bake No. 6

Nothing fancy today. In fact I was feeling quite frugal and used up what I already had in the cupboards and fridge. Today I made rock buns. A good old fashioned stick to your ribs kind of cake!

I didn't have any raisins so I substituted extra sultanas. I also left out the zest of a lemon.

I wont be reporting back on my baking every Friday although I will still be baking. I think I will make this more of an occasional series so as not to bore everyone!

This delightful and simple recipe came from the book above. I have made these buns a few times now and they come out just right every time. For me, it has been a fail safe recipe.

Just look at the size of that bun! Have a lovely weekend, whether it be cooking or baking or indulging in other types of creative pursuits. If you do intend to make a cake I'd love to see what you make. x

    I made a sponge cake (again) and filled it with Apricot Jam...and some cheese scones (again..as they go down well here!) . Didn't take photos this time..don't want to bore everyone!!

  3. I have this book too but never made any thing from it. Your rock buns look lovely. I already baked this week so won't be again this weekend. I have been painting though so have been creative.

  5. Did you say "disappointing me"??.. I think NOT! I LOVE your cakes every Friday, but you should post what you feel most comfortable doing, of course! These rock buns look delicious!   8. I was only telling my family that the first thing we ever made in cookery lessons at school were Rock Buns and I've never made them since. Perhaps it's time to have another go as your look so good.x

  11. Mmm - they look good, Simone - I like rock cakes and enjoy making them too - I usually use a recipe from the BeRo book but your recipe looks good and the book it comes from looks interesting - I love the title:)

  12. All my recipes are stuck in a loop! I keep churning out the same ones. I will be keeping the cake baking up once a week but I will bake between Friday afternoon and Sunday morning as sometimes Friday afternoon can be bit of a rush, and Sunday morning I get adventureous, so I can create new things.   13. I thought of you on Thursday when I baked a cake, just a pineapple jam sponge. I often make rock cakes, and I always choose to use sultanas, as I like their plumpness! I usually make cakes on a whim and will only have store cupboard ingredients available to use. I bought that book the Christmas before last and still haven't had a chance to look through it! x

  17. You are certainly inspiring me in the baking department Simone, I could just eat one of those right now! Our supplies are somewhat diminished after a snowy weekend where we seemed to do nothing but drink tea and eat cupcakes and brownies! Might have to get the apron on now and rustle up something nice!

I sometimes find the most satisfying recipes are those for which you use what you’ve got lying around in the cupboards, seems very efficient! x

  19. Oooh ThankYou for the recipe (I had forgotten mine). I'll look up that book on Amazon too. I have to put my hands up and tell the honest truth - that I have not (properly) baked since joining your lovely baking club :o( I have been poorly though. But I will make up for it on Friday's to come (hopefully) and I can't wait! I am at least all stocked up on ingredients :o)
