Simone's Friday Cake Bake No.5

This weekend's offering is a caramel banana cake.

I had no idea how this would turn out as I mixed measurements using American cup sizes and not the Australian cups in the recipe. I think Australian cup sizes are slightly larger. Nevertheless the cake came out wonderfully moist and moreish.

It is even slightly healthy as it contains three bananas!!! (I won't mention the sugar and fat content though)!

As most people have their favourite banana cake recipe and mine is a bit hit and miss. I thought you would like the recipe for the caramel topping to put on your own cakes.


Caramel Topping

60g/2 oz butter
half a cup soft brown sugar
2 tablespoons of soured cream
one and a half cups of icing sugar, sifted

Melt the butter and sugar in a saucepan, stirring constantly for 2 minutes without boiling the mixture. Add soured cream and bring to the boil. Remove from the heat and stir in the icing sugar.


It is delicious. Very sweet and like a creamy fudge!

  5. That looks very scrummy, Simone - thanks for the caramel topping recipe - I expect you could put that on other cakes too, like coffee or chocolate. I love banana cake:)

    My word, it seems I find myself looking forward to the weekend to see what delicious cake you will have whipped up this week! That banana loaf looks scrumptious! I can just imagine the taste of it...Im inspired to bake now...oh dear me, Im going to be the size of a house at this rate :D

  10. Don't worry about the fat and sugar content. What am I saying, I am supposed to be cutting out calories! Your cake looks great Simone, and I wouldn't say no to a big slice. The fudge topping so reminds me of the lovely fudge my Mum used to make for us as kids. x

  12. Sweet Simone, I'll take that frosting. Yes, I am frosing, icing girl. I've been known to eat off most of the frosting and leave the cake for my husband. He's used to it. And that caramel frosting would not last a day with me around.
