Chocolate Chip Chocolate Brownies

I still haven't had the motivation to craft but I do like to keep my family (and me) supplied with a few sweet treats.  These brownies were so easy to make.  I took the original recipe from The Amish Cook's Baking Book but substituted the walnuts for chocolate chips, medium eggs instead of large, sunflower oil for the vegetable oil and left out the vanilla essence all together (because I had run out!)  It is all mixed in one bowl so there is minimal washing up.

Ingredients
1 and half cups of plain flour
2 cups sugar
half cup unsweetened cocoa powder
half teaspoon salt
1 cup sunflower oil
4 medium eggs
half cup of chocolate chips (small bag)

Method
Pre-heat oven to 180 degrees.  Grease and line an oblong baking pan approximately 9 by 13 inches.  I think mine was smaller than this.  I used a swiss roll tin.

Put all the ingredients (except for chocolate chips) in a large mixing bowl and beat for about 3 minutes with a wooden spoon.  Add the chocolate chips and fold in. Pour the mixture into prepared tin.

Bake for about 35 minutes.  They will be wet when you first bring them out of the oven but will firm up when they have cooled down.  Put tin onto a cooling tray and mark into squares.  My mixture made about 30 bite sized squares.

A couple of these would go well with a cup of coffee.  They have a crusty top and a squidgy middle!  Store in a tin separating the layers with greaseproof paper.
